Heritage and Harvest

Our EVOO is born from the lush olive groves of Conversano, where local cultivars like Cima di Mola, Olivastro, Simone, Cima di Melfi, Leccino, and Coratina are nurtured with care. Harvesting begins in October, primarily by hand, ensuring the delicate touch and respect these olives deserve.

The Art of Oil Making

We employ a blend of tradition and innovation. Our olives are processed immediately after harvest, using a grinding extraction at a controlled temperature of 24 degrees. This method preserves the healthy properties of the olives, resulting in oil that is stored in stainless steel tanks to maintain its purity and flavor.
