Sicilian tradition tells of a cook from Catania who, after the premiere of the infamous opera by the maestro Bellini, the Norma, inaugurated for the premiere in the Opera theater of Catania, hosted the maestro and the artists, and having to face a unorganized dinner and as it was close to closing time, he prepared a simple pasta with tomato sauce seasoned with fried aubergine pieces, covered with a cloud of salted ricotta. In our version, obviously, we don't add the salted ricotta, because it must be added at the moment. We use aubergines from our Ragusa countryside, which we fry rigorously without any pre-cooking. We do not use preservatives or thickeners. Packaged in a low weight of 190gr to not expose the product to prolonged oxidative processes in the pasteurization tunnel. It is more than enough for three meals (three people).
